1.    How likely is it that you will know (or be given) every PI Point name you need to work with?

I will be working maintaining and configuring all the elements and assets, therefore I will be needing to get familiarized with most if not all of the PI points in my company.

2.    Your boss sees your great work and says that MixingTank2 should have the same display, how do you build out another display for the second mixing tank?

If tank 2 is already an asset then I don't need to. I just need to instruct him how to change the required visualization to show MixingTank2 data.

3.    Next week, you know that the products in your mixing tanks will change. How would you get this new information onto your display without the use of Asset Framework?

The products can be assets too, so I would make sure that the products that are going to be mixed are properly set as assets so I can measure the metrics required.
